When it comes to going all in, Greenbrier native Jace McCollum officially can say that he is willing to do just that with everything he does. His unforgettable, pink, bold food trailer and unique breakfast menu are a testament to his determination to stand out. He knew that standing out is what he would need to do to be successful in a vast array of breakfast options.

After being laid off for making a TikTok on the clock he began to look for a lucrative opportunity to be his own boss. “I really didn’t have anything to lose, I’ve lost it all before.” He shares, “I was a menace to my community, and battled addiction. In fact, I was arrested once in the parking lot my food trailer is across the street from. But, Renewal Ranch truly saved my life. After losing that job though, the wind was knocked out of my sails again but that was really the best thing that could have happened.”  McCollum opened The Arkansas Breakfast Club in 2024 with ambitions to become the go-to breakfast spot. “We didn’t have many options for breakfast in Greenbrier so I started to research what I needed to do to make that happen. With the help of many individuals believing in me and helping behind the scenes here we are today.” Ironically, around the same time unbeknownst to McCollum, others were investing in offering breakfast options to the community. “Once I found out other businesses were coming to town it gave me even more determination to give it my all and stand out.

McCollum is a firm believer in speaking things into existence and writing his goals down. He shares, “I have a long list of things that I am hoping to accomplish one day. Having the Arkansas Breakfast Club win New Business of the Year was actually on that list.” Other goals include having multiple food trailers in bigger cities in Arkansas.

One major factor in The Arkansas Breakfast Club’s success is attributed to being highly active on TikTok. “We have people that come from all over because they saw us on TikTok. I hope some of the unique things that we are doing inspire other small business owners because what we are doing really works!” Besides being highly active on TikTok, McCollum tries to be heavily engaged with community activities, give other small businesses opportunities by setting up in his parking lot, and doing frequent giveaways. “Overall we are successful though because of the people of Greenbrier. We are nothing without our community supporting us.”
